I’m eating these leftovers for lunch today. They are really really really goooood. I want to eat 5 more, but I really shouldn’t.
Last night I put together these shredded chicken tacos for my fam & they were delish. Try them out! It’s an easy/yummy/cheap weeknight meal.
I have plenty of photos to show you every step. My little brother, Nathan, was my official food prep photographer last night. He’s always looking for ‘favors’ to do for me in exchange for Sonic. So last night I let him take the pictures. He didn’t do too bad either!
2.5 lbs. boneless/skinless chicken breasts
1 T. olive oil
1/2 white onion (chopped)
1-2 cloves garlic (minced)
1 pkg. chicken taco seasoning mix
1/2 c. water
4 T. honey
Start by heating up a tablespoon of oil over medium-high heat in a large skillet.
Chop & mince your veggies.
You could dice up a jalapeno to go in here too. I planned on doing just that but the jalapenos were all bad.
Add them to the pan & let cook for a minute or two.
Then add the chicken right on top.
Pull out the chicken taco seasoning…
& reserve one tablespoon for later (if you’re making refried beans like me). Add the rest to 1/2 c. water & give it a good stir around.
Flip the chicken over & get the other side nice & toasty too.
Once your chicken is cooked through fully & no longer pink, pour the water/seasoning mixture right on top of the chicken. Bring it to a boil then let simmer for 8-10 minutes.

I saved that tablespoon for my refried beans. Mixing that into a can of beans makes them go zing. Warm ’em up when you’re ready to serve!
Remove the chicken from the pan when it’s finished simmering. Leave everything else in that pan!
Throw it in your handy dandy stand mixer. Turn it on the lowest setting for just a minute or two.
Now you have perfectly shredded chicken! Easiest way to shred meat ever! This is my favorite kitchen trick of all time.
Alright, head back to that pan & turn the heat back on.
Juice the limes into the pan.
Add the honey now too.
Mix that up scraping the bottom of the pan. Get all the goodness out!
Add that to the perfectly shredded chicken & let the mixer mix that together for you real quick like.
Cover the bowl with foil till it’s time to eat.
Get all your toppings ready! I put out red onion, tomatoes, cilantro, cheddar cheese, lettuce, corn & avocados.
Serve with rice, beans, & warm corn tortillas. I used the Pioneer Woman’s recipe for cilantro-lime rice.
This chicken really is that good. I promise.
