This cookie cake is pretty decadent, there’s no getting around that. It’s deliciously decadent & just dying to be melt in your mouth. It’s just what you need to take your Valentine’s Day celebrations over the top this weekend! You can make everything from scratch or take the simple route & use store bought versions- no judging here y’all.
Start with 2 round cookie cakes. Prepare one batch of cookie dough & bake as you would a layer cake, in round cake pans. You can make your own favorite recipe, use my go to chocolate chip cookie recipe, a box mix, or refrigerated cookie dough. The options are endless.
For the cream cheese layer, you’ll mix 1 block of cream cheese with 1 container of marshmallow creme. This is the traditional recipe for easy fruit dip, but it tastes amazing inside this cake! So if you have some fruit lying around double up this cream cheese mixture & use half for snacking.
Spread the cream cheese over the bottom cake layer.
Then carefully place the second layer on top of the first.
Personally, I find it extremely important that you use a can of store bought fudge icing for the top layer. Like, I cannot stress this enough. Once the cake is finished, you’ll put it in the fridge & something magical happens when you refrigerate the icing with the cookie. It becomes like a chocolate chip fudgy dream of pure goodness. I’m sure your homemade stuff will taste great too, but you’ll never know the deliciousness of store bought fudge icing. That’s okay if using a can of icing irks your insides. I understand. You will just be majorly missing out.
Spread out the entire can of icing on top, you want it to be pretty thick.
Now, add some festive sprinkles to finish the cake off!
- 1 batch of prepared chocolate chip cookie dough
- 1- 8 oz pkg cream cheese (softened)
- 1 container marshmallow creme
- 1 can fudge icing
- Prepare & bake cookie dough in 2 round cake pans according to recipe directions. Let cool. Combine marshmallow creme with cream cheese.
- Spread cream cheese mixture over first cake layer.
- Place second cake layer on top.
- Spread fudge icing on top layer.
- Top with festive sprinkles.
- Refrigerate until time to serve.
Chill for at least 2 hours to get this cake to it’s prime, then serve in gigantic slices alongside a gallon of icy, cold milk.
