I’ve been combatting it with a homemade fudge pie since I was a teenager. I love this recipe because it uses things I always have on hand, it doesn’t make too much at a time & it’s pretty darn delicious!

I thought I’d update the usual pie version for a pound cake & I added more chocolate in the form of mini chocolate chips- yum!

To make your own, you’ll need to round up butter, sugar flour, cocoa powder, salt, vanilla, eggs & mini chocolate chips.

Melt 1 stick of butter & mix with sugar.

Add all remaining ingredients, excluding the chocolate chips & mix thoroughly until there are no lumps.

Stir in chocolate chips & pour into greased loaf pan.

**You can use any kind of chips you like, or a mixture like peanut butter & chocolate!

Bake at 350 degrees F for 30 minutes or till a toothpick inserted in the center comes out clean.

Ingredients
  • 1/2 c butter
  • 1 c sugar
  • 1/2 c flour
  • 5 Tbs cocoa powder
  • pinch of salt
  • 1/2 tsp vanilla
  • 2 eggs
  • 1 c mini chocolate chips
Instructions
  1. Preheat oven to 350 F.
  2. Melt butter & mix with sugar.
  3. Add all remaining ingredients, excluding the chocolate chips & mix thoroughly until there are no lumps.
  4. Stir in chocolate chips.
  5. Bake at 350 F for 30 min.
  6. Cool for 10 min.
  7. Slice & serve with fruit, powdered sugar, whipped cream or ice cream.

    • I use a regular 9″x5″ sized loaf pan. It’s not very thick honestly. You could use a smaller load pan & make 2 mini ones if you’d prefer it to be thicker or even double the recipe. In which case, you would need to bake for an extra 10 mins or so.
