I welcomed the fall menu a little early last night with a delicious, slow cooker meal!
This Pork Loin with Apples & Potatoes is warm & hearty for the season ahead! My husband who doesn’t particularly love pork, even enjoyed this meal! It’s a weeknight winner y’all!

Anytime I can incorporate apples into a fall dish, I feel extra seasonal. Do you cook with apples in the fall? The perfect pairing always seems to be pork & this recipe is no different! The flavors tend to go so well together this time of year.
To make this yourself, you’ll need- Smithfield Roasted Garlic & Herb Loin Filet, olive oil, rosemary, dry onion soup mix, apples, an onion, carrots & red potatoes, plus your slow cooker. Head to Walmart to pick up everything you need for this autumnal meal!
Set your slow cooker to cook on low 8-10 hours or high 4-6 hours. Lay the Smithfield Roasted Garlic & Herb Loin Filet in the bottom of the pot.
Slice & dice apples, onion, carrots & red potatoes. Throw into a bowl & toss with the olive oil & seasonings.
Cover the Smithfield® Marinated Fresh Pork with all the good fruits & veggies. Put the lid on & walk away!
Come back to it at dinnertime, slice the Smithfield Roasted Garlic & Herb Loin Filet if necessary…it fell right apart with tongs for me.

- 3 small apples, cored & sliced
- 1 onion, sliced
- 1 c carrots, diced
- 2 c red potatoes, quartered
- 1/2 c olive oil
- 1 packet dry onion soup mix
- 2 tsp dried rosemary
- Place Smithfield Roasted Garlic & Herb Loin Filet in bottom of slow cooker.
- Mix apples, onion, carrots & potatoes together.
- Toss with olive oil & seasonings.
- Pour over Smithfield Roasted Garlic & Herb Loin Filet.
- Cook on low 8-10 hours or high 4-6 hours.
