I welcomed the fall menu a little early last night with a delicious, slow cooker meal!

This Pork Loin with Apples & Potatoes is warm & hearty for the season ahead! My husband who doesn’t particularly love pork, even enjoyed this meal! It’s a weeknight winner y’all!

To make this yourself, you’ll need- Smithfield Roasted Garlic & Herb Loin Filet, olive oil, rosemary, dry onion soup mix, apples, an onion, carrots & red potatoes, plus your slow cooker. Head to Walmart to pick up everything you need for this autumnal meal!

Set your slow cooker to cook on low 8-10 hours or high 4-6 hours. Lay the Smithfield Roasted Garlic & Herb Loin Filet in the bottom of the pot.

Ingredients
  1. Smithfield Roasted Garlic & Herb Loin Filet
  2. 3 small apples, cored & sliced
  3. 1 onion, sliced
  4. 1 c carrots, diced
  5. 2 c red potatoes, quartered
  6. 1/2 c olive oil
  7. 1 packet dry onion soup mix
  8. 2 tsp dried rosemary
Instructions
  1. Place Smithfield Roasted Garlic & Herb Loin Filet in bottom of slow cooker.
  2. Mix apples, onion, carrots & potatoes together.
  3. Toss with olive oil & seasonings.
  4. Pour over Smithfield Roasted Garlic & Herb Loin Filet.
  5. Cook on low 8-10 hours or high 4-6 hours.

  • I wish I could eat a lot of Smithfield products but because of maltodextrin and dextrose being added to ingredients, I can’t. Those ingredients, non-nutritional, are poison to me. I wish you could find a way to not add these ingredients.

  • Jacqueline, I tried to avoid preprocessed food as well. So I bought two smallish pork loin roasts and marinated them overnight in olive oil, garlic, rosemary and thyme after cutting slits in the roasts and stuffing them with cloves of garlic that I halved or quartered. (They were big cloves.) I browned them first in a heavy pan and then cooked as directed. Haven’t tasted it yet but the house smells heavenly.
